
Zucchini Tomato Bake
Low carb and tasty!
Serves 6
Approx. 150kJ, 1g protein, 3g carbs, 1 g fat per serve
Ingredients
1 red onion + crushed garlic
3 zucchini halved and criss-crossed with a knife
Cherry or normal tomatoes
2-3 tb capers or green olives
2-3 tb red wine vinegar
Thyme and olive oil
- Slice onion and scatter on bottom of roasting tin with garlic
- Place zucchini and tomato on top and drizzle with vinegar, herbs and olive oil
- Sprinkle with thyme + salt and pepper to taste
- Roast for 40mins at 180 degrees until tender then scatter with capers or green olives
