Zucchini Tomato Bake

Low carb and tasty!

Serves 6

Approx. 150kJ, 1g protein, 3g carbs, 1 g fat per serve


1 red onion + crushed garlic

3 zucchini halved and criss-crossed with a knife

Cherry or normal tomatoes

2-3 tb capers or green olives

2-3 tb red wine vinegar

Thyme and olive oil


  1. Slice onion and scatter on bottom of roasting tin with garlic
  2. Place zucchini and tomato on top and drizzle with vinegar, herbs and olive oil
  3. Sprinkle with thyme + salt and pepper to taste
  4. Roast for 40mins at 180 degrees until tender then scatter with capers or green olives
