
Cauliflower Tabbouleh
How to make a tasty salad – herbs of course!
Serves 8 240kJ, 2g protein, 5g carbs
Ingredients
1 large cauliflower (600-700g)
2-3 lemons juiced (50-70ml)
7 spring onions – finely chopped
1/2 bunch parsley, 1/4 bunch dill, 1/4 bunch mint – all chopped
tsp ground allspice
1 tbsp olive oil
1/2 pomegranate to spinkle on top
Method
- Grate cauliflower or pulse quickly with a food processor – should look like cooked bulgar wheat once done
- Gently mix all ingredients in a bowl and add black pepper for taste
- Sprinkle pomegranate on top or chopped nuts/seeds
