Beef and Prune Hot Pot

The prunes give this a rich sweet flavour and are fantastic for bowel health!

Serves 10-12


1kg beef (stew, chuck)

1 onion

3 garlic cloves

1 large carrot

1 cinnamon stick, 1-2 tsp thyme, bayleaf, tsp paprika, 1/2 tsp cumin

1 cup red wine + 1 cup beef or vegetable stock

tbspn tomato sauce

tbspn apple cider vinegar

1 cup prunes

slivered/flaked almonds for garnish



  1. Brown beef with tsp oil
  2. Add onion, garlic – cook until soft, then add carrot
  3. Add all the herbs and spices and cook for 1 min then add the red wine
  4. Turn the heat to low and add the stock, tomato sauce, apple cider vinegar and prunes
  5. Simmer with the lid on for 30-60 mins or until beef is soft. Take the lid off for 15 mins to allow it to thicken.
  6. Garnish with slivered or flaked almonds for a crunch
