Carrot Pineapple Slice

For those who do not like overly sweet food but want a really moist and healthy/nutritious snack.  Adjust the sugar and fruit for sweetness.  

Makes 28 squares (bite size)

1 square = approx. 190kJ, 7g CHO, 1g protein, 1g fibre

1/3 cup brown sugar

1tb light flavoured oil (canola, sunflower, light olive)

tsp vanilla

1 egg

1 cup wholemeal plain flour

tsp baking powder

tsp baking soda

tbsp cinnamon

1 cup grated carrot (approx 1 large)

1/2-2/3 cup drained crushed unsweetened pineapple

1/3-1/2 cup sultanas

1/4 cup milk

 

  1. Combine wet ingredients in one bowl – sugar, oil, vanilla, egg
  2. Combine dry ingredients in another bowl – flour, cinnamon, baking power and soda
  3. Add wet ingredients to dry, then stir in corrot, pineapple, sultanas and milk
  4. Pat into a 30 x 20cm baking tray and bake at 180 degrees for 25 mins or until golden
  5. Let cool then store in refrigerator loosely covered
