San Choy Bow

  

A quick, delicious and nutrition packed recipe perfect for busy weeknights.

Makes 10 serves

1 serve = 550kJ, 4g CHO and 14g protein  

Ingredients: 

Sauce  

  • 1 Tsp cornflour + 1-2 tb water mixed together
  • 2 tb soy sauce
  • 2 tb oyster sauce
  •  1 tsp sesame oil
  • 1 tb mirin (optional and gives a sweetness)  

Mince mixture

  • 1-2 garlic cloves + knob ginger
  • 1 onion/spring onions, 1 carrot, 5-6 mushrooms
  • 200g can water chestnuts (adds a crunch)
  • 1 zucchinni 
  • 1 carrot 
  • 500g pork/chicken/turkey mince
  • Lettuce leaf to serve

1. Mix sauce ingredients together and put to side

2. Fry garlic, ginger, onion for 1-2 mins

3. Add carrot, pork until cooked

4. Add mushrooms, water chestnuts and sauce and cook until it thickens

5. Take off the heat and allow to cool for a minute before spooning a tablespoon per lettuce leaf to serve.
