Salmon Frittata


My new family favourite; this frittata is an easy to prepare Salmon meal with lots of flavour. Plus it has loads of pantry/staple ingredients, so it makes for a great back-up meal when you need it. 


Salmon Frittata



  • 2 cups of cooked rice
  • 415g can red/pink/smoked salmon (drained and flaked)
  • 375ml can of light evaporated milk
  • 2 eggs whisked
  • 2tbls olive oil
  • 1-2 tsp curry powder
  • 1/2 cup grated reduced fat cheese
  • Fresh herbs of choice (parsley, dill or oregano go well)   


Step One:

Pre-heat oven to 170 degrees celcius 

Step Two:

Combine ingredients and pour into a pie dish or a 2L capacity baking dish. 

Step Three:

Sprinkle over some extra cheese and herbs dipped in olive oil. Bake for 40 minutes.

Team with a quick salad and dinner is served. Also great cold for lunch the next day!
